Ghanta Tarkari (without Onion Garlic)



Ingredients:

200 gm Potato
50gm sweet potato
50 gm Raw Papita
2  raw bananas
150gm brinjal
100 gm beans
100 gm Gajar
50 gm beet
200gm pumpkin
50gm yam
50gm arum
Badi- 1 cup (fried)
1 coconut (grated & chopped)
 kala chana, cholle, yellow chana dal (soakedfor 5/6 hrs)
Sprouted moong
Cumin powder & coriander Powder 2 tsp each
2 tsp ginger paste
2/3 large tomatoes
1 tsp haldi
Salt to taste
Desi Ghee (3-4 tsp)
Whole Cardamom & cinnamom
Bay leaves (2 nos)
Red Chilly Powder
2 tsp panch phutan
3-4 whole red chillies
Chopped coriander leaves
Roasted Jeera powder (2 tsp)
Garam Masala ( Cardamom & cinnamom pwd) 1 tsp


Method:

Wash all the vegetables properly & cut all the vegetables.
Take a nonstick kadai. add 3-4 tsp oil. Put the vegetables & stir it  for 5 min & then add salt & haldi, add little water & let the vegetables boiled properly.
Then put  a cooker on gas & pressure cook the kala chana,sprouted mung , cholle & yellow chana dal.
Add desi ghee in a pan. Put whole red chillies, Whole Cardamom & cinnamom.Add phutan.when they will start crackling, Add bay leaves,then add ginger paste.stir for some time .Add cumin & coriander powders. Stir well. Add chopped tomatoes. Add red chilly powder, little bit haldi & salt.Then put all the boiled vegetables & all cooked dals.stir it & then add badis , grated & chopped cocunuts. Cook for 4-5 min. Add garam masala & roasted Jeera Powder.Garnish with chopped coriander leaves.
